I love colours in my food, which is kind of strange because I also love cooking with spices which more or less renders a monotone into the dishes. But there are occasions when I feel like having a plate of fresh salad and it is in such situations that this coleslaw comes super handy. This not just acts as salad, but also as a great filling for your sandwiches and wraps. True it has some mayo and cheese (eating which might not be a good idea if you’re on a mission to lose weight) but it has its share of healthy vegetables at well. I mean come on, I wouldn’t be having red cabbage, carrots, capsicum and green onions in a single dish had it not been for something like this! So guilt aside, let’s plunge into this!
Serves: 4-5
Ingredients:
Red cabbage, thinly sliced: 1/2
Green onions, chopped: 4-5 stalks
Carrots, thinly sliced: 1
Capsicum, finely sliced: 1 medium
Chicken sausages, cut lengthwise: 5-6
Coriander leaves. chopped: 1/4 cup
Mint leaves, chopped: 1/4 cup
Mayonnaise: 3 tbsp
Cheese spread: 3 tbsp
Lime, juice and zest: 1
Paprika: 1 tsp
Salt: to taste
Pepper powder: for seasoning
Method:
1. In a large bowl, mix the cabbage, green onions, carrots, sausages and capsicum, Coriander and mint.
2. In a small bowl, add the mayonnaise, cheese, lime juice and zest and whisk well. Season with salt, pepper and paprika.
3. Tip the dressing into the salad and mix well. Serve immediately or refrigerate for an hour before serving. Goes brilliantly as topping/filling for sandwiches and burgers as well.
